As a college student it's easy to fall into the trap of unhealthy eating habits. From stress food like pizza, chips and salsa, popcorn and the oh so tempting Nutella. Eating healthy, or in some cases, eating at all can be a challenge with our all consuming schedules. However, smoothies have been my savior and the more nutrition I can pack into a meal the better, especially when winter rolls around destroying the student-body's immune system. This smoothie can become your breakfast, lunch, or dinner! Simply put... It's one of the most delicious things I've ever created.
- 1/4 cup brocoli
- 1/4 cup kale
- 1/4 cup spinach
- 1 cup frozen berries (I use a berry mix with raspberries, blue berries and mulberries)
- 2 tlbs of chilled chia seeds
- 3/4 - 1 cup orange juice
- 1/2 cup almond milk (vanilla flavor)
- 1 long spoon (to reach down to the bottom of the blender)
Prepare. I am always on the run so if I make the smoothie in the morning I usually will prepare all the ingredients the night before! I prefer fresh veggies whenever I can but in college it's hard to always get everything fresh, which is why I usually result in freezing most my veggies and fruit. Don't worry the nutrients are still there!
Chop, chop. Chop the veggies as small as you can, that will make blending them easier and faster.
Just Chill. Pour the chia seeds and almond milk into a separate glass or tupperware. Leave it in the fridge for at least 25mins, giving the seeds time to expand. Chia seeds turn into a gel like substance and will absorb all the almond milk, growing at least twice their size! It should look similar to pudding.
Stir it up! The key to fitting everything into the blender is by blending it one at a time. First, veggies with the OJ, then slowly add the berries, more OJ if needed, and finally toss in the chilled chia seeds on a slow stir mode, so you don't crush the seeds. The seeds will add a little crunch (YUM!)
Chia seeds are one the BEST sources of fiber in the world for 3 reasons. (1)Also known as "energy/strength seeds" by Ancient Aztecs because they are high in nutrients and low in calories. (2)Chia seeds are loaded with antioxidants.(3)They absorb 12 times their weight making you feel fuller (eating less) and feed the good bacteria in your stomach so your tummy can digest better! -source
I typically can NOT finish this portion all in one day so I save the other half for the next day! Or have it for breaky AND lunch!!
